Albuquerque's 505 Chile Huevos Rancheros

This recipe will make one serving. Adjust accordingly.
Flour or corn tortilla
2 fresh eggs
1/4 c. shredded cheese
1 medium onion - chopped
1/3 sweet onion - chopped
2 leaves romaine lettuce - chopped
Sprinkle cheese on tortilla and melt in microwave for 30-ish seconds. Meantime, cook eggs as desired. Place cooked eggs on top of cheesy tortilla and top with tomato, onions and lettuce.
Garnish with sour cream, chile sauce (salsa or enchilada sauce works too) and Tucson's Greatest Guacamole. Enjoy!!
