2 t - heaping - ultrafine sugar
12 spearmint leaves - organic if possible
1 lime - halved - organic if possible
1 oz (1 shot) of rum - high quality brand
4 oz club soda
ice
In mojito glass add sugar. Add spearmint leaves to glass. Juice one half of the lime - quarter the other half. Add juice then lime quarters to glass. Muddle until quarters are juiced, mint is bruised and scent is divine. Stir, add rum, ice and club soda. Stir and garnish with a spring of spearmint or a lime wedge.
