Personal Pizzas on the Grill

1 round of large pizza dough - cut in quarters

olive oil

toppings of your choice - consider a margarita pizza (olive oil base with fresh garlic, crushed red peppers, grated parmesan cheese, fresh sliced tomatoes, thinly sliced mozzerella cheese (fresh if possible), fresh torn basil to top cooked pizza), a bbq chicken pizza (bbq sauce base with cooked chicken breast chunks, grated jack/cheddar cheese, red onions, scallions - green and white parts, cilantro to taste), a thai pizza (peanut sauce base with cooked chicken breast chunks, peppers and cliantro to taste) or a goat cheese and

artichoke heart pizza (olive oil base with a sprinkle of rosemary, fresh goat cheese medallions and marinated artichoke hearts)...mmm - let your imagination run wild!!

 

Roll dough into 4 thin crusts. Oil one side and place oil side

down on medium heat grill. Cook one minute

or until golden brown. Top grilled side

as you choose. Place pizza back on grill,

close lid and cook for three to four minutes

or until toppings are melted and bubbling.

 

Serve and enjoy!!
